Mexican Lasagna

I swear Mike and I eat food other than Mexican themed!!  Lately, it's been one of our favorites though and we couldn't wait to try this Mexican Lasagna recipe.  I found it on Food Network and saw this it had great reviews.  We loved it and only changed a few things.  Our grocery store didn't have spinach tortillas and we thought the mexican style cheese would be better than just cheddar or pepper jack.  Top it with some sour cream and taco sauce at the end and... YUM!!

Mexican Lasagna

Prep: 10 min
Cook: 20 min
Yields: 4 servings


Ingredients:

3 tablespoons extra-virgin olive oil
2 pounds ground chicken breast
2 tablespoons chili powder
2 teaspoons ground cumin
1/2 red onion, chopped
1 (15-ounce) can black beans, drained
1 cup medium heat taco sauce or 1 (14-ounce) can stewed or fire roasted tomatoes
1 cup frozen corn kernels
Salt
8 (8 inch) spinach flour tortillas
2 1/2 cups shredded Cheddar or shredded Pepper Jack cheese Mexican-mixed cheese
2 scallions, finely chopped


Directions:

Preheat the oven to 425 degrees F.

Preheat a large skillet over medium high heat. Add 2 tablespoons extra-virgin olive oil - twice around the pan. Add chicken and season with chili powder, cumin, and red onion. Brown the meat, 5 minutes. Add taco sauce or stewed or fire roasted tomatoes. Add black beans and corn. Heat the mixture through, 2 to 3 minutes then season with salt, to your taste.
Coat a shallow baking dish with remaining extra-virgin olive oil, about 1 tablespoon oil. Cut the tortillas in half or quarters to make them easy to layer with. Build lasagna in layers of meat and beans, then tortillas, then cheese. Repeat: meat, tortilla, cheese again. Bake lasagna 12 to 15 minutes until cheese is brown and bubbly. Top with the scallions and serve.

Rustic Enough?




Mike and I need a headboard.  We have never had one and I've decided our bedroom needs some TLC in the decorating department (who am I kidding, my entire HOUSE needs some... :P).  I've looked at a few bed frames and at other interesting ideas for a head board and I keep coming back to the pallet look.  There is something so natural and rustic about the look that keeps drawing me in.  What do you think?  Is it too much, way too over the top?  I think with the correct styling it could be amazing. I especially love the painting on the first one and the burlap banner on the last.  It gives it such a subtle touch of sweetness.

Take a Moment #1


Every once in awhile I need to take a moment to just... breathe.  I find something... a book, or a movie or a picture and sit and relax and take a few slow breathes and let myself unwind.

All that Glitters....







Check out these pictures!  Sparkly, eh?  I can never get enough glitter in my life... especially when it comes to my crafting.  If I had my way I would be sprinkling this amazing stuff on everything I make.  Though some see it as tacky, (and yeah, it can get there!) I'm addicted to it!  The two shots of the women REALLY make me want to try something like that.  Perhaps I'll start doing some funky self-portraits in general.... (tons of random ideas running through my head right now!)

Taco Deliciousness




Mike and I had tacos last night for dinner!! They were sooooo good.... with lots of sour cream and tons of olives. Yumm! I know the last picture isn't the prettiest but Mike and I don't like to mess around too much with vegetables when it comes to hard tacos. It's just so hard to fit all that goodness into that little shell! We prefer to just skip to the yummy parts and leave the veggies for the soft tacos. :)  

I knew I couldn't just show off what I had for dinner.... so I figured why not see what I could find taco-related in the handmade world! Check out these items -- they are AWESOME!


I am in LOVE with this pin!  They saying is so simple and true.  There will be tacos.  :)


 Okay, this pouch is irresistible.  I love the green pattern and that taco couldn't be much cuter.

 I am really digging this print.  It is so colorful and the words make it so unique!


How can you resist that face?!!!  This pillow makes me smile... the hat, the 'stache, those eyes!

Aren't They Precious!

I had a post full of some great Etsy finds all ready to go for today until I woke up and decided.... today is made for cuteness.  It's time for some animals!  Jinx was also being pretty good for the camera which is rare.  Had to take advantage of it!

Yama is getting HUGE! We weighed him the other day and he is 75 pounds!  And only seven months old.... so crazy.  I can't imagine him much bigger than he already is. 

 Ok, so I said Jinx was being good for the camera but I didn't say he was in a good mood. Doesn't he look moody in this picture?  He is such a grouch in the mornings!

 This is my female betta fish, Chloe!  I have had her for almost a year now.  She actually has a ton of personality for a fish. She gets excited and swims up and down when I sit down and tries to attack my finger if I put it near the tank.... :)

 Rupert! The newest addition to the family.  He is a male betta and the reason for the new tank.  Unfortunately, I can't put the two of them together!  Lovers forever separated, I suppose. :P

 The new tank! Sorry the lighting is so bad!  I was having such a hard time getting a good shot without a horrible glare.

 My desk is clean!  I promise this is the only time you will see it like this.  Most of the time it is a cluttered mess.  On a normal day you can find books, embroidery thread, nail polish, netflix envelopes, candy..... :)

 Mike's mother lives in Louisiana right down the road from Troy Landry (from Swamp People!!) She sent us two shirts and a bumper sticket that says "Choot Em!", one of the phrases Troy is known for.  We knew they lived in the same town but were shocked when she told us she knew him!  So exciting!  He is our favorite person on that show.  Also, the purple is holding pretty well in my hair!  It has faded slightly but still very noticeable.

Pinterest Last 5 -- Vol. 2

I figured it's about that time to share my last five pins from Pinterest again!  Are you a member?  You can find me here!  I swear when I'm pinning sometimes I stick to similar themes and colors, seems like it anyway!  Do you find yourself doing that as well?  I hope you enjoy these!

Isn't this picture absolutely gorgeous?  It's such an amazing little treasure in the middle of nowhere!  I just wish I knew where it was located.

 I am in love with this picture. It is so mystical and full of summer.  It makes me miss my friends and those long nights of sitting under the stars.

 Orange Peel Cupcakes -- Yum!! I love any kind of citrus cupcake, and these are so cute!  I might have to make these soon...

 Look at these!!  I can't wait for fall to get here just so I can make them.  Though can you imagine using other colors with say a flower shaped cookie cutter? Or something else? Adorable!

Okay, okay.... I know this is number six but I couldn't help myself!  I was born and raised in Ohio and I saw this and literally let out a squeal.  Too cute to eat!  I want to frame this as well. :)  (Also, I couldn't find the source for this one so apologies! If you know, give me a heads up.)

How was your Saturday?  Lunch with Nanc' was awesome... we went to one of my favorite places here in town (Neighborhood Pub) and I had the blue cheese wedge salad. It was delicious!! Tons of blue cheese crumbles and lots of bacon... yum!  After that we ran to the store and I got a new betta fish (we named him Rupert! Pics to come...) and then made our way home to hang around and veg in the AC.  I saw City of Angels for the first time and can't believe I hadn't seen it before. It was so good!  We also stumbled on My Big Fat Gypsy Wedding and...... WOW! That show is nuts.  I'm pretty much addicted.

What are you plans for Saturday?  I don't have much on the agenda other than finish up Harry Potter book 5 and ... well.... that's it for now. Hope you have a good one!

Song of the Moment #1

The Civil Wars -- "Barton Hollow"

This is my favorite song at the moment. I heard it yesterday morning on one of the random music channels on TV and immediately ran over to see who it was by.  I love the southern feel with a bit of darkness mixed in.  A great summer night song.  I hope you all enjoy!

What are you doing on this hot Saturday?  I will be spending my time working on a few blog posts and getting my photos organized on my PC. They are such a mess!  I'm also going to lunch with my good friend Nanc' and then hopefully catching up on some Army Wives on Netflix!  Hope you have a good one.  :)

P.S. -- What do you think of the new blog design?  I made a new banner and changed the colors around a bit. I think it's brighter and a lot more fun. :)

Reading has always been something that I have identified myself with.  In high school I'm pretty sure I was known as the girl who always had a book (or three) in her backpack and always preferred reading to actually listening to the lecture.  As I got older things didn't change much, though I must admit I became a little bit lazier when it came to my book selection.  I am a creature of habit.  I admit that I read the same books over and over, struggling to leave my favorites behind.  I am terrified of trying new authors (silly, I know) and worry that I will hate the piece.  I know I am missing out on so much amazing work!  I am making a point to start a book list, and work my way through it.  Right now I am reading Harry Potter, book 5 and Pride and Prejudice.  After these, I'm not sure yet!

The Perks of Being a Wallflower -- Stephen Chbosky

I love all types of reads, fantasy and period work are some of my favorites. I also love gritty, creepy stories and am really wanting to find a few good mysteries.
